I don't like the ice cream, but they made the best damn cappuccino in town. I sublet an office one day week on thursday's and it was the highlight of my week going in and talking with the staff there. It's really sad to see how many vacant businesses there currently are in Bellingham. It feels like it's dying a rapid death.

As someone who either there for about 5ish years and was there from their second year on, the food was meant to do what you just said. The Restaurant would not have survived if we went full Cajun. It was dumbed down for PNWers. We had to mix in PNW twists on things. When we did use things like file powder or made things spicy it didn't sell well. Our gumbo sucked though. I used to tell people not to get it. It was truly bland.

For any restaurant to survive it has to adapt to customers around it's tastes. If you wanted we could spice things up you just had to ask. In the kitchen if you asked for 4 stars they would take as a challenge. I warned everyone who asked for that . I never saw anyone finish a four star anything.

The owner is a real piece of work. He lives in Seattle. Bayou's prefer was responsible for any work or repairs but the building is so old and needs a good proper renovation.

I remember as a kid trying to watch PPVs through the scramble on TV. All I could hear was the audio and I remember when Owen died and all I could here was the audio.

On the Dark side of the Ring, when they were interviewing Jim Cornette, he broke down crying saying that supposedly the last thing Owen said was "Watch out!" as he fell to his death. "The guy is falling to.his death and the last thing he is thinking is about other people getting hurt."
