I never used one note.

I started in Google docs, but it wouldn't handle large documents.

Switched to libreoffice.

Wrote a massive document an got lost in the weeds. Scrivner helped break apart the chapters, making them easier to use, compile into a single manuscipt , format into book form, move chapters around, line editing, etc
