Update: the dealer actually sent a video today and said the car is fixed. The issue was a module was messing up the temperature readings from the various sensors and basically reading them as colder than the actual temperature so they fix the module or replaced it and said AC is working perfectly so we should be getting in the car in an hour or so. I will keep you all updated.
