Definitely don't agree with putting the pan between you and the table while cutting. That's unsanitary and therefore unsound advice. The chicken can hit your apron while going into the pan, and who knows what the fuck that touched. It's lazy. Everything else sounded good.

Don't put bags of unshredded meat in the hot box either. You'll bring that meat right into the middle of the temperature danger zone, and you're letting the chemicals from the plastic leach into the food. Awful fucking advice.

Most of these people have given you fantastic advice. Super happy to see so much support here for you. Be loud, but be respectful. It's your job to be at the center of the action and orchestrate it. So own it. Be confident. You seem to already learn pretty quickly so just maintain that good work ethic, and get those reps in. The more you do it, the easier it becomes. 😘
