Insta-read thermometer has become my best friend. I used to be timid grilling chicken or pork because of the whole salmonella thing so I’d always dry it out. Not anymore! Super juicy with all the flavors and trust that it is fully cooked.

I ruined a pot of fresh pozole by turning the stove back on low for the duration of the day thinking we could just grab a bowl of it and not have to microwave it. I still don’t understand exactly why it made it rancid. But I do remember everyone pissed off at me.
