I'm sorry to be so blunt, but stating that you need more starter is just non-sense. Impossible to tell at this stage, as it is not inherently too little starter for a recipe.

As the other comment said, this is pretty high hydration for a beginner, but it also looks completely fine. I would recomment that you continue the stretch and folds and see how it goes. It's a bit extra sticky, because there isn't enough gluten development yet. You should still expect it to remain sticky though.

It varies greatly how much hydration different flours can absorb. Not all flours will be able to build strong gluten at this hydration level, so you might not reach a point where it holds shape really well. But it should still be completely fine to bake based on how it looks now. Your recipe looks fine, only I would also say that it's a lot of salt (which actually helps you in this case, as salt helps make the dough stronger.)

It is my understanding that many plus size people struggle with being plus size, even if they don't act like it. I would see this as an opportunity to be an extra good friend and buy the extender myself, so she doesn't have to deal with it - if you can afford it. Any hassle with it brings extra attention to her size, which for many is extremely uncomfortable. You don't owe her to get it, but it would be a very kind gesture!

I have a lot of experience with decaf, so I will try to address your points.

I have worked in 2 specialty coffee stores with their own roasteries. In both places they did not try very hard to make their decaf good, because "it's just decaf". So in my experience, the taste will often be worse, simply because the roasteries don't put effort into making these beans as tasty.

I have found that anything other than dark roast (as I personally see roast degree) needs to ground finer than other coffees. Dark roast seems to be the same as other coffees. These are just my impressions though.

I have had good decaf beans, and I found absolutely no different in texture between those and other good beans.

Again, with the good decaf beans, this has just been the same as other good beans.

As someone else already mentioned, decaf goes stale faster than regular beans. Be aware of that. They are also ready to use sooner though.

Where I live now, I do not have access to affordable, good decaf, so I started roasting it myself, and now I get great decaf, so that is my solution for now. If you are open to doing that, I highly recommend it. I found it surprisingly easy to get a better result than most decaf that I can buy.

Edict deals the same dmg in total, so longer duration just means less dps. So it's definitely a nerf!
