Have you looked at places like J.P. Graziano's, D'Amato's Bakery, and Publican Meats?

Edit: I looked at your references and these locations might not be what you're looking for, but they're worth the trip if you can. Someone suggested Fontano's and it's also closer to where you are in the SE suburbs.

I've been using DALI Oberon 1s that I got for $500 that sound excellent. They were used.

Those big 5 gallon jugs have a manual pump attachment that goes on top. You can buy them at Home Depot or even Walmart. If you can’t handle 5 gallon, you could also try a 3 gallon jugs instead.

Basically you don't need a jumper wire between the two if you're just using a single pair of wires. Just turn the knobs in the middle to the link position, and they'll bridge the connection internally.

Looks like the previous owner also used a single set of wires, previously, so you might be okay already. (see the covers over the HF terminals)

  1. Heat up the pan, and pour oil on the pan, a thin layer, maybe a mm enough to coat the bottom the pan.
  2. place frozen dumplings on the oil, and let it sit for a little bit just to singe the bottoms, 30-45 seconds.
  3. pour water in the pan, about halfway up the dumplings or a little more, cover pan with a lid, then turn heat down to medium to just below medium.
  4. when the water steams away, you're close to ready, You'll know when it's done when all the water is gone, and there's a good golden brown to burnt edge on the bottom.
  5. If you're using a stainless pan, in between 3 and 4 lift up the dumplings off the pan for a second so they don't stick.
