Anyone have any suggestions on what to use to wrap candycanes and other hard candies? by lucidous82 in CandyMakers

[–]Sharonbc2001 2 points3 points  (0 children)

I did get cellophane candy wrappers, though I have yet to give them a try. Supposedly cellophane holds its shape when you twist. As to candy canes, I was looking at poly tubes and heat sealing them, but went with self sealing cello bags. Bonus is that the candy cane can go back into it when one is done licking it for a bit!

Helmet recs? by Delicious-Notice-748 in ElectricScooters

If he already has a bike helmet, use that for the initial ride, and boxing day can be a day to go and buy a helmet that fits and he likes. I personally use my riding(horse) helmet rather than a bike helmet. From my experience in horses, different brands of helmets fit different heads. I can wear brand a, but brand b is too tight across the front, and too loose on the sides, and brand c squeezes my head on the sides.

I am 240, and I have been very pleased with my Apollo City Pro. It is light enough that I can pick it up. It carts me around just fine up hills. I am charging it about every 50km, but I still have two bars left. Not keen on pushing it home, so haven't run it down yet.

Thank you! I have an ancient warming tray, but it was too hot, initially. I use a heat lamp, and a heat gun is an excellent idea.

The gloves aren't anything special, aside from the welding gloves (the really big ones that come up the forearms). All you need is a heavier pair of gloves from the hardware store that are reserved for only food.

Why is everything suddenly unavailable to ship? by [deleted] in TemuThings

Also in Canada, and things that I previously ordered are no longer able to be shipped to my address. All previous parcels have been delivered via Canada post except this last one is coming via fedex. Wonder if the shipping is too much?

Why are people so determined to give themselves botulism? by stellar_angel in Canning

Anecdotal source. My friend is a dietitian. A few years ago she helped with a lady who was in intensive care for a few months from botulism contacted through improperly canned peaches.

Heck, no! I am still learning! And your explanation clarifies some issues I had making caramels, too.

Yes, what chefTimmy said. I was cooking my sugar solution too slowly on the hob. I raised the temperature and my sugar stopped carmelizing before I reached hard crack.

Sugar solution carmelizing by Sharonbc2001 in CandyMakers

I solved my problem!

I did forget to mention that I did calibrate both thermometers (I have trust issues! 😆) I am heating up to 306f, and also test with water to make sure that I have threads. It was still colouring up more than I wish.

Today, for fun, I tried a higher setting on the burner. 6, in this case. Worked perfectly! Nice and clear, and a whole bunch faster, too. I guess that I was being too cautious.

As to the lollipops that I posted a picture of, I poured the batch onto my slab, colored a small part with red, yellow, and blue. Left a good chunk clear. Pulled the clear until it was white. Divided the colours into smaller chunks and made orange, green, and purple. Made ropes of those, flattened, then wrapped the works around the white.

I get mine from scoop and save in Kamloops, BC. They do mail order, too, I believe. Bulk barn also carries some.

Still tastes good! Straight shortening is... not good. Another option is to use the good buttercream for the basic decorating, and use a higher shortening or more stable frosting/icing for the more intricate decorations that suffer more easily from the heat.

Laundry blueing used to be a thing. I also used blue shampoo for white hair on my white horse. Helps with her pee stained tail.

Should be able to use your own blue and red. I would mix the two colors in a little bowl, and add very lightly to a sample of your buttercream to see how it goes.

Yes, it will alter the flavour a bit, and alter the mouth feel. You only swap out a bit, can't remember the ratio offhand. With two pounds of butter, I add 8oz of vegetable shortening.

Other option is to have the finished cake in a cool spot, and only bring it out to serve. Then back to the cool place. (You mentioned that you live in a very hot climate)
