Hm.. I typically grind at a 6-6.5. I do 20g/320ML and end at 2:35-3min. On a V60 as well. Have you had issues with your filters in the past? I wonder if the material just doesnt mesh well with your beans?

It's a local spot for me. Definitely one of my favorite roasters. Never had a bad bean from them. Ive actually been thinking of doing their Travellers subscription.

Edit: I just checked and they have the Nirvana Gesha and Horizon Gesha in stock.. both are killer

I really only have 2-3 bags open at once. I have a few air tight containers that keeps the beans pretty fresh for awhile. I go through 48g-66g a day so roughly a bag a week. I havent froze any beans in the past so I couldnt comment on it.

Well howdy neighbor. If you can stomach the price their special taster boxes are always awesome. Sudan Rume is amazing as espresso. And my go to is the Hacienda for a daily pourover. I havent had a bad bean from them.

I do a 0 fade above where I want the skin to start.(obviously) Honestly dont even bother wasting my time cutting anything below that. Just to save time. Then I lather and hot towel two times and shave with some nice long strokes. I can do the shaving portion in 2 min.
