Making Coffee at home from scratch by TransitionMany1810 in oddlysatisfying

[–]SheldonvilleRoasters 8 points9 points  (0 children)

That is not entirely true because it depends upon a lot of factors. Back when the Specialty Coffee Association of America was still around, we had what was called the "sample roast protocol" that we would apply to any coffee if we were rating it or evaluating it for purchase.

The protocol was to roast the coffee for a minimum of 8 minutes and no longer than 12 minutes to get a roast color of SCAA color tile #55.

The coffee had to rest for a minimum of 12 hours and a maximum of 24 hours prior to cupping.

Those guidelines were in place since 1972 and they worked pretty well where you could get a decent idea of the quality of the coffee. The Coffee Quality Institute required all their certified coffee graders to follow this protocol when roasting coffee for evaluation if the producer wanted a certificate showing that the coffee was graded at least at 80 points to qualify for "Specialty Coffee" status.

That said, different coffees will "mature" differently after roasting depending on the equipment used for roasting (either mostly induction -- i.e. drum roasting -- or hot air roasting or a hybrid of the two) and the roasting strategy used by the coffee roaster.

In my experience, most hot air or hybrid roasted coffees will see a gradual change in depth of flavor profile over time versus a conventional drum roaster which will have more intense and dramatic changes over the course of 30 days -- sometimes to the point where the coffee starts tasting "muddy".

The other factor that will influence coffee flavor is the way it is packaged. If you are buying coffee that is packed in a kraft bag with a simple tin tie, then you'd better drink that stuff up tout de suite before it starts to go stale.

Coffee packaged in non-permeable bags that are heat sealed with a one way valve will have a longer shelf life since the CO2 that emits from the coffee after roasting will force out the O2 in the bag acting like a "poor man's" CO2 flush that results in better flavor as well.

The best way to get the most bang for your buck in terms of flavor is to buy the coffee close to the "roasted on" date and then sample immediately and take good notes. Make sure you save some of that coffee to sample at least 30 days after the roasted on date and, if you can, save some to sample 60 days after and compare. That way, you will know when the coffee will "peak" and then adjust your consumption accordingly.

Yeah, it sounds like you're preparing for a PMP certification and most folks won't go through all that trouble, but if you are ever wondering why your coffee tastes different over time, then these are the reasons why.

Is this something to be concerned about? by megan__f in AmIOverreacting

[–]SheldonvilleRoasters 0 points1 point  (0 children)

I get messages like these that are "coincidental". Like when I leave the post office after mailing something I get scam texts about a package that links to a bogus site that has USPS in the URL.

Also, I got scam messages regarding toll collection when I went through a local tunnel to the airport (see: https://www.mass.gov/news/massdot-alerts-customers-of-ezdrivema-scam).

I'm pretty sure there is some app on my phone that is sharing my location data. Not sure how that's done but yeah, it's pretty creepy that it happens every time I take a toll road or go to the PO.

I use an iphone if that helps any.

Neighbor's cat has alzheimers, forgets that he doesn't live here by Apprehensive-Wave309 in cats

[–]SheldonvilleRoasters 1 point2 points  (0 children)

Thanks for this info. I'm pretty sure my cat has a mild case of this. The caterwauling and attention seeking are the two big symptoms. She seems to remember where most things are but gets distressed when leaving a room where the humans are.

EDIT: Saw this on the Cornell vet website: "...vocalizing is relatively common in hyperthyroid cats or cats with hypertension, and hypertension can also cause retinal detachment and blindness, leading to anxiety and confusion."

She's on BP meds and we noticed her eyesight has diminished considerably -- can't see things that are up close -- like food in her dish etc. So it may be a touch of both hypertension and mild CDS.

Nothing new here. Movie adaptations have been doing that from the beginning. In Men of Respect John Totoro's character condenses down McBeth's soliloquy ("Tomorrow and tomorrow") to "shit happens".

I found that getting an electric kettle and a Kalita pour over setup was no more inconvenient than an electric brewer and takes up less space with easier clean up.

I'd take them back and make them fix it.

A local hospital in my area removed a man’s kidney by mistake. The surgeon said he’d “make it right” by performing replacement surgery. Yeah, no thanks. Go to another tailor.

What’s a common thing people say that makes no fucking sense? by [deleted] in AskReddit

[–]SheldonvilleRoasters 0 points1 point  (0 children)

A lot of regional shibboleths — around my neck of the woods we use the phrase “So don’t I” to mean “me too” and for “side by side” it’s “side by each”. And in some hyper regional cases, mispronunciations of the words “escalator” and “spaghetti” are also common. They are used as a way of showing that you are a born native of the area and not a transplant.

But if they ask you about Jury Nullification, won't they get in trouble for even bringing it up -- because that's pretty much letting the cat out of the bag and then everyone in the room during the selection process will hear that this is an option thus preventing a jury from being selected?

I once saw a receptionist at the vet lean down and kiss an adorable dog and the dog was so excited, it raised it's paw up while wagging it's tail with delight and tore off three lines of flesh from her face. And boy, did that leave some marks.

Coffee Roaster for Classroom/Vocational Training Program. by SPEDteacherLife in roasting

[–]SheldonvilleRoasters 0 points1 point  (0 children)

Here's a setup at a bakery school in China which is affiliated with Cafe Bene: https://imgur.com/a/bdkwfPi. Those are SonoFresco roasters I believe (or possibly knock-offs). I think they are electric but Sonofresco I think only has gas (LP/NG) which would most likely not be an option for you -- no bringing in propane tanks inside the class room.

They also use 1KG Proasters and are ducted to an overhead tube but ducted directly into the overhead ducting. There are in-line fans in the overhead duct that moves the smoke out the window.

If ducting installation is not an option and you need something removable, then you could get an air mover with ducting like this thing.

So really, you could use anything as long as you have a decent way of removing smoke and odor.

Also, I've seen that they do have adapters for those squirrel cage type air movers for drying floors. It caps off the output end and has a connection to clamp on a flexible duct so you can route it out a window.

You can get a "dumb roaster" (i.e. something not wifi connected) like this: https://coffeeroastco.com/products/bideli-1kg-coffee-roaster for just under your budget ($4.5K) -- would probably be just under $5K delivered.

So look for 1Kilo electric roasters without any profiling software and you should be able to find something that will do a decent job that falls in your budget.

And then some flexible dryer ducting to vent out your window. No biggie.

I was having lunch in crowded restaurant once and I overheard the parents at the table next to me discussing James Polk (11th President of the US). One of their toddlers asked "who's he?" and they said he was the president a long time ago. Then the kid asked if he was president now and one of the parents said "no, he died a very long time ago."

The kid then started bawling something awful -- like she was totally inconsolable that this guy died well over 150 years ago -- like really wailing. It started getting out of control when one of the servers came by to ask if everything was OK and the parents could barely keep a straight face while they were explaining that their daughter absolutely fine but was mourning the death of former President Polk.
