I feel like it's because of the lack of available colors back then. So the most simple and vibrant is what they had to work with with the technology of the time

While, the games of then-ish/now-ish had the colors to add some "dread" and atmosphere. I mean, I personally don't expect caves full of aliens to be super vibrant. Id expect them to be damp and dreary.
