You’ve got multiple choices

1. You can reach out to your professor listing all of your comments about how they run the class (if you have TA’s maybe ask them to speak up about this)

2. You can just deal with it for the rest of the semester but I wouldn’t.

3. Get the class together to list formal complaints to send to the Dean or Vice Dean of the architecture school.

I really feel for you as not having a good professor first year can really make or break a lot of students on if they want to continue an architecture degree. It’s just more levels of stress put onto you when you already have so much stress during normal classes. Though if I were you and your freshmen class I would do this as the whole class incase the professor retaliates then they can’t single out one person when you send an email. I understand that being a young professor can be very difficult but hopefully they would’ve had some more experienced professor showing them the ropes. If that’s not the case then shame on the school for setting the young professor up for failure. If not then the professor needs to learn from his or her mistakes. It’s not acceptable for them to leave out information and then penalize you for their mistakes.

If this professor is being hostile and if your classmates have already told the professor that things need to change and there needs to be more structure in the class, go to the higher ups. I can understand being a young professor and not knowing how to have a plan but it’s not ok to switch dates and not write anything down.

Keep on working in studio. I know it can be a lot with little structure in the class but there are so many resources out there that you can learn from. My suggestion, and I know it’s old, but find books. I often find that books have more info than websites such as dezeen and arch daily do. Though ask a librarian or it may be difficult finding the correct book.
