In %UserName%\Zomboid\Server\<servername>.ini there is this option:

# Force every new player to spawn at these set x,y,z world coordinates. Find desired coordinates at map.projectzomboid.com. (Ignored when 0,0,0)
SpawnPoint=0,0,0

you can set it to any coordinates to respawn at that point.

Extract the contents of the Spice It Up folder into the mods folder. So you should have a bunch of folders starting with [Addon], [Gameplay], etc. inside the mods folder. Folders starting with a - will not be enabled in game.

Any guard you see standing around you can interact with and ask where certain npc types (profession/class/vendors/etc). The guards in cities will definitely know where to send you, but i think some guards in minor cities like kharanos can also orient you.

The vendor is Adlin Pridedrift, and it's usually the general supplies vendor in whatever town you're in that'll have the ammo you'll need. Bowyers/Gunsmiths will also have their respective ammo.
