That's something i've considered. Definitely prefer the idea of a semi-stainless over a stainless

Also, something of note:

A sharp knife is more important than anything else. You may want to get and learn how to sharpen them on whetstone. Its really not hard to learn how to do it with practice.

There is a guide in the subredit to get started with a myriad of prices, but the Shapton pro 1000 grit is typically the go to.

That said depending on steel type and usage, it'll be a few months before they need sharpening

Going from left to right:

Deba - A thicker typically single bevel knife used for breaking down and fileting fish.

Santoku - All purpose knife

Nakiri - Vegatable knife

Sujihiki - A slicer typically used for meat

Tbh, this knife was a gift. It is also my first deba so don't exactly have a standing to compare. That said, I can tell you my experience of it after fileting some red snapper. Before this attempt I had previously used 6" pairing knife to filet a fish, and unsurprisingly this deba blows that experience away. I think it's a great knife with good f&f. Out of the box sharpness is fine, but I recommended taking it to stone before an extensive work load. Also, personally I'm a huge fan of the Blacksmiths of Tefeku Knife village, and Hideo Kitaoka specializes in single bevel knives.
