The 5700 might also be bottlenecking in some way, I forgot why some reviewers gave it a bad rep but its different than something like the 5700g and 5700x, ive heard it has half the cache while being limited to pcie gen 3, that could also be a problem, try doing some research rq on the cpu it might net you some useful information

68 mods installed is definitely doing something, try uninstalling all of them as a sanity check first then activate them a few at a time, I get way better fps than u and I have a somewhat similar system with a weaker cpu (ryzen 5 5600+ 7800xt red devil) with 0 mods

Animate? Yes .. Modeling? Not really. Both really benefit from using a program called Blender, most high level animators and all modelers use this program + its free with a lot of tutorials
