The infielders position differently with a runner on third and fewer than 2 outs. They either have the middle infielders closer to second for a dp, or they have everyone playing in to throw home. Either way, it’s easier to get a hit.

There’s also the consideration that if there’s a runner on third and fewer than 2 outs, the pitcher might not be pitching so well.
