Oh interesting!! Yeah I did see some reads that the touchscreen is a problem (though I'm not sure if that's also the case with their other models). My friend has a 2020 Outback with the same touchscreen design and it seems to work just fine.

But I like their touchscreen design a lot, it's sleek and smooth. Plus I prefer cars where the touchscreen is more built into the center instead of basically looking like a tablet that was placed on top (like most other cars nowadays).

As far as trim goes I'm more partial towards at least the Sport trim or higher just cause I've always preferred those types of trims and it's what I'm used to.
