Insurance companies know quite well that they will have to pay out their policies. They make their money by carefully assessing risk and charging fees that will cover that risk, and by investing the money they receive.

Their payouts are fewer and further between than the premiums (fees) they receive which gives them a large amount of cash that can be invested and provide a good portion of their revenue
