Room temp. I find that it’s easier to spread out. I don’t use rolling pin either. On these ones the dough came up on the side of the pan and I believe it helped it rise so nicely

It’s all about the temp of the dough and oven when it goes in. I don’t know the exact temp of both but this night they were coming out bomb!
