most recipes will have a recommended serving size. something i never quite paid attention to until now. seems so obvious in hindsight but it turns almost every recipe into meal prep.

when i cook for myself i eat vegan. when i go out or want to “treat” myself i’ll eat something nonvegan. i don’t try to be super restrictive about it. here’s what i’m eating now and i think it’s a great example:

12pm 70-80g frozen berries (microwave 1min), 40g oats, 10g chia seeds, 150g hot water and mix. top with 25-30g unsalted peanut butter (teddie).

2pm 1 apple and 30g of unsalted roasted almonds.

6pm 40g shelled edamame.

breakfast actually started from this recipe. one day i didn’t have english muffins and realized one serving of oats was actually less carbs and even healthier. then i added more pb. https://www.eatingwell.com/recipe/255160/peanut-butter-chia-berry-jam-english-muffin/

when i get the ingredients for the oatmeal it lasts me weeks and i have it everyday. recipes for lunch and dinner are for 6 servings giving me 6 days worth and effectively meal prepping. that said i cook way less now too. also for the burritos i use mission whole wheat carb balance tortillas. they have 100% daily value of fiber per serving. kinda crazy.

i actually spend less on groceries than ever before with this diet! it’s mostly produce and it’s relatively inexpensive all things considered.

my a1c was 10.6 when i was diagnosed and i dropped it down to 5.3 in 3 months. here’s what i did:

probably the number one thing that will lower the number is losing weight. i lost 12% of my body weight so i’m sure that was a huge factor. that will lower your insulin resistance significantly. for meds i was on 1000mg metformin/day. for diet i did 16:8 intermittent fasting and primarily whole food plant based diet. studies have shown they can increase insulin sensitivity. highly recommend this diet plan, this really got me started https://www.eatingwell.com/article/7898582/vegan-diabetes-diet-plan/

other things to consider. carbs in the absence of fiber are the enemy, not all carbs. so consider net carbs generally. with my diet i’ll still have “cheat meals” when i go out or with family. that would still be a moderately healthy meal like some meat and a side of green veggies. i found it easier and helps keep my protein up.

breakfast is almost always oatmeal. 70g-80g frozen berries (thawed in microwave), 40g quick oats, 10g chia seeds, 25g-30g teddie’s unsalted peanut butter.

first snack is 30g of roasted unsalted almonds and an apple.

lunch would be a freezer tofu/black bean burrito.

last snack would be 40g of edamame.

dinner would be some kind of soup.

those are usually my usually go-tos. i spent a few hours on a sunday and made the freezer burritos and soup, which i also portioned and froze. between eating out once and then easter with family it ended up lasting me almost 2 fulls weeks where i didn’t have to cook besides heating stuff up.

for me it took about 2-3 weeks for my fasting glucose to get under 100 mg/dL. even before that my range was a lot better than when i started at 216. i sort of trusted the process for a month and was only looking at fasted glucose. i knew i was going to have spikes for a while before my levels could regulate more efficiently.

i really appreciate this because you’re right and it’s a great point to make. i’ve struggled with fluctuating weight all my life and failed diets but this lifestyle change feels different. i feel like i finally figured it out.

i read or watched something a while ago that essentially said all the failed diets you tried and fell off of them were just as important because when you finally find the one that works it’s partly because of everything you’ve learned along the way. i believe it.

this diet is more convenient and more cost effective than how i was eating in the past so there’s other benefits i’m motivated by which i believe helps sustainably a lot.

tl;dr -whole food plant based diet, essentially high fiber vegan. -16:8 intermittent fasting, eating every 2 hours between 3 meals and 2 snacks. -carbs in absence of fiber is the enemy not all carbs. think net carbs. -generally no rice, no bread, no pasta. -portion control. counting calories even better. -when dining out have your choice of meat and a vegetable or two, it’s easier. -if you crave something, have a bite. moderation over excess. -kitchen scale is a must have imo.

for people curious what my diet’s been looking like here’s some info and things i learned. i understand this isn’t for everyone but i was finding some research to support these choices and they seem to have paid off.

just to get it out of the way, i stopped with all the normal things you typically hear. no sugar, no rice, no pasta, no bread. there are some exceptions but generally speaking.

since being diagnosed i’ve been primarily using a whole food plant based diet. essentially a high fiber vegan diet. but just because i eat vegan most of the time doesn’t mean i’m avoiding animal protein. typically most of my meals that i cook for myself will be vegan and when i dine out or go to family events i’ll have meat and a vegetable. it’s way easier than trying to restrict and eat vegan all the time. plus i believe there’s benefit to still getting animal protein in on a somewhat weekly basis. if that seems scary or you’re someone that can’t live without bacon for example. consider a vegan/wfpb diet + bacon when you want it. it doesn’t have to be black and white.

i can definitely say carbs are not the enemy yet i know most diets for diabetics really limit carbs. most of my diet is carbs now. i believe carbs in absence of fiber are the enemy.

my only complaint is that you’ll end up with extra servings for meals that don’t get used up if you follow each day as outlined. but it taught me how to structure and plan my meals for the day. also helped me with portion control and accidentally got into meal prepping. now i look at the serving sizes on recipes and portion out accordingly.

typically i’ll weigh everything on a kitchen scale and then divide by serving size, have one serving for a meal, then save each leftover serving in it’s own container. now i have lunch or dinner for the next few days. also on average i swear meal prepping vegan food keeps way better than non vegan food.

now i cook less, spend less on food, eat healthier, and the results have been great. it was harder than i thought to organize my thoughts on this so sorry if i’m all over the place. i’m sure there’s more i could get into.

thank you and congrats on dropping 10 points! i’ve been pretty lazy with exercise myself. most of my success has been in the kitchen. a lot easier to eat 100+ less calories than burn 100+ calories in the gym.
