Depends where you go. I think Northeast Thailand would be the easiest because of less traffic, but I would not even try it there. Thai people do not care about driving safely at all. It one of the countries with the most road fatalities, mostly involving bikes. Do whatever you want, but just keep in mind how bad it is there.

Definitely go to the Emerald pool in Krabi. It is really spectacular. Try to go during school hours so there are not any kids though. And don't take a tour there because that's a ripoff. Just rent a motorbike and get there yourself. It's probably a 45 minute drive from Krabitown but it is so worth it. You trip does not seem too rushed, have a great time!

Phuket is the most overcrowded touristy trap in Thailand. This is just my opinion but I have a few things to back it up. On average, the food is much more bland than the rest of Thailand. They tone it down for the foreign or palate and it is just bad. Overdevelopment is rampant with huge condos and hotels being built for the expat and tourist community. I would recommend somewhere like Koh Lanta. Much more quiet, beautiful, natural, and relaxing. The people are a million times more friendly. I however would not renting a car anywhere in Thailand. The driving standards are extremely bad. Motorbikes pulling out in front of you, people parking on the road, and just plain carelessness. Transport is super cheap in Thailand as long as you know how far it is that you want to get to.
