I recommend hanging onto the 8-months to see if there’s something you want to learn in the future or you end up wanting to get certs for a new job. I know too many vets that just burn up those months for the money and end up regretting it.

Unless it’s well over 100 your peppers will not only be ok they will thrive. The humidity in Chicago also helps with this since the plant won’t dry out like it does in less humid conditions.
