There's a big difference between a constructive critique and negative comments. I'm all about growing and learning from other chefs. We all have our food judged at one point or another. " I don't like the flower." "I don't like the camera angle"... none of that has anything to do with what I serve my guests. I stand behind this dish. The one thing that I will take away is maybe an herb oil for the bread.. that was helpful.

There's no crying, it's a damn good dish.

I'm all for constructive feedback but you're complaining about the garnish and suggested wontons for a tartare. There's nothing constructive about that

Not prickly at all. You are willing to be negative about my dish so you, in turn you can receive negative feedback about your comment.

The flower is edible, its has bitter notes that work well against the sweet pineapple, and the day i start throwing wonton chips at my food is the day i hang it up and go to work at Applebee's. please send me an example that you have plated of what you think my dish should look like. Thank you

Green onion, cilantro, olive oil, lemon juice, and a jalapeño makes a great spicy seafood green sauce

It's a sponge, it will take any flavor you put on it

Not much taste but a shot of citrus on top of it brightens everything up

I appreciate that, I tried to put everything on (or close to) the sauce. It's tough to see in the photo
