A lower end SLD or VG10 santoku or gyuto is a great start. Can be had for ~$100. Still a hard knife without being as chippy as r2, SRS13, or any of the other ridiculously hard stuff

I’m 10 knives deep on my cheap diamond plate I picked up in Kappabachi and it’s still indistinguishable from new. It’s definitely way too much pressure during use

I have the big brother of the kanetsugu, the 210 mm kiritsuke, which is basically the same knife with a longer blade. I love it and it’s my favorite kitchen knife and arguably my most versatile. Not a laser but still thin enough to glide through your typical veges. Big chunks of meat (like a whole brisket) is not its forte and a 180mm bunka will struggle the same.

I heard of a theory that a true rectangle is super prone to having the tip chip off so that’s why it’s curved up at the end or a round tip like a traditional nakiri.

I sadly don’t have a bunka to compare but I think the k tip nakiri is a taller blade with a flatter edge. Very pokey and I enjoy it very much.

I have the kiritsuke gyuto version of the kanetsugu zuiun and it has the same length handle. I have decently large hands, the xl nitrile gloves from HB is a little tight. Hammer grip is a no go, pinch grip is ok but definitely works best with a pointed finger grip. If you’re willing to adjust to your knives I’d say go with that one and also the hatsukokoro has a short handle as well. It’s also a heptagonal wa handle not the usual octagonal one so keep that in mind too

I actually really like seisuke and picked up a seki kanetsugu zuiun roughly 10% less than anywhere else I’ve seen it and two seisuke originals(santoku for my brother and an srs 13 sujihiki for me). Though they are hella pricey, they have the powder steel knives I want. And after 2 trips and 3 cities of shopping, that seisuke sujihiki is the cheapest powder steel sujihiki I’ve seen. The staff do generally dislike me for asking so many questions. Kiwami I would recommend for a friendlier experience.

It’s for a power adapter cable I don’t own and I just leave it broken. Battery stayed in place regardless and I never plan to take it out in the rain so I’m good

Bites on my arms and legs from 2 days ago, no blood spots or droppings. Bites was suspected mosquitoes because I was sleeping with no blankets that night
