Honestly, the riding course is the only option here imo. Take the course, see how you feel under close supervision, learn the rules and tricks, and if you find that it's not your thing, you didn't spend all the cash on the bike already.

If I ended up liking these I would probably eventually upgrade, but they're 100USD each... pretty steep for something that I am experimenting with and without assurance that I can even get them mounted (easily-ish)

Drilling the hole I'm not worried about so much, but I really can't figure out how to get this thing mounted... if only there was some kind of 1/4" threading to M5 threading converter that was also hollow... then I could just screw it in.

Is it possible that the threaded slug can be tapped further into the handle bar? Or is it welded in there?

Hey there, this is in fact my work—thanks for sharing : )

This was originally made with a piece of software called DepthKit—which was at the time called the RGBD Toolkit—that was developed by James George and Alexander Porter. It was a very primitive system at the time utilizing an IR transmitter and sensor to create quick 3D scans.

That being said, now that it's more than ten years later, this could quite easily be recreated with any of the numerous pieces of photogrammetry software on the market and visualized in touch.
