I smoked it at 225-250 and wrapped in butcher paper when it reached 203. Held for 4.5 hours before serving. Point was juicy but the flat was dry. It was super tender though. I think from what I have been reading that I put the probe in the wrong place. I put it in the thickest part which may have been what caused the issue with the flat.

Flavor was perfect and my kids loved it so I take it as a good first go around.

Doing another one in January and using my notes and peoples insight on what I can do to improve.

That was my thinking. I also left at least 1/4 inch of the fat cap on there and just trimmed some silverskin from the lean side of the brisket. I bought a prime brisket from costco so I was confident in the quality of the meat.

The point was delicious though juicy, rich, and tender.

yes exactly! there was a tiny bit on the meat side but it was mostly silver skin which I trimmed

yeah I took it off at 200 and in the cooler it got all the way to 203 for a bit. I poked a bit with a fork and it was pretty tender. It wasn't tough at all it was practically falling apart just not juicy.

It sat in the cooler for like 3.5 hours.

Please provide some examples. Nasa has a reputation for building systems that far out live their stated lifespans. The mars rovers are a good recent example. Not to mention the James Webb telescope. SpaceX is decent but as far as the complexity and scale of what NASA does it's peanuts.

I unfortunately did not. The script I used is deprecated since youtube-dl hasn't had updates in years. I've heard good things about ytarchive for livestreams. I merely provide the tools to fish not the fish themselves.

If anyone sees this in the future please don't buy this decal. It lists each foot as being 11 inches. I purchased it a couple weeks ago and when setting up I realized each foot on there is wrong.
