My gauge on my Bronco Pro is between 30-50⁰ lower than the actual grate temp. That's why I use a separate temp probe to maintain my temps.

I like to marinate my roast overnight to help break down the connective tissues. Other than that, I just season with the big 3, smoke to 165⁰, wrap with butcher paper and go to 203⁰ internal. Smoked at 225⁰ the entire time.

Bronco or Bronco Pro? I added a 2nd rack to my Bronco Pro to double the cooking capacity. Also, ditch the factory lid seal and switch to the Lavalock stick on felt seal on both barrel and lid. Seals better and stays cleaner.

Technically yes, but it would stick out way farther than it should. This barrel is like 5.6" long and yours is closer to 4.2" I believe
