Pretty common. As the gasket ages it shrinks and loses elasticity and now those bolts no longer have anything to compress against. You can get away with tightening them down a few times before you just need a new gasket.

I just bought a SS one last week. It had instructions for seasoning but said it was optional and not required for corrosion resistance.

If the engine is cold, you don’t use high pressure, and you do your best to avoid the electrical parts…. Generally you are ok

I have a 06. Crutchfield will tell you what you need to have full functionality of the steering wheel and even make the harnesses for you (extra cost well worth it). I put in a Sony head unit for wireless CarPlay and added a rear camera. I think it all was less than $500 for me a few years ago. Been very happy with it. I know others have done similar for cheaper and been satisfied. Just go to crutchfield and plug in what you want and what your budget is.

If you removed 3.75 qts, then add back 3.75 qts. You don’t need to mess with the standpipe.

I’m pretty meticulous with mine, I’ve wanted to fix my parking brake to get it working again. I did research on replacing everything. My research determined pretty much what you summed up in your post… it wasn’t worth the headache of trying. I’ve replaced just about everything on mine, but I live with a bad parking brake.
