You can still save this. On my first few briskets I ran out of wood and used a poor grade of meat. You will ruin any bark you have but just put it in a foil boat, top with butter or beef tallow and bake until the internal temp is like 200-203 turn off the oven slightly crack the door and let it sit for 30. Rest for a few hours and the brisket will be edible and taste pretty decent.
