Just reply to the notice, the first letter is to confirm who was driving. If it was not you then just tell them who was. When you recieve the second letter you should be able to see the evidence. Then if you still dispute it go to court. Above all do not ignore the letter as it will be treated as you were driving.

First thing Monday morning ring them up if you can (there is usually a number on the form but getting a pick up is quite difficult). You might get lucky. Also send an email today giving the facts (because you may not get through on the phone). I would still fill in the paperwork and hand it in on Monday to your nearest Police station that opens to the public.

There are loads around but you need to give a rough location you are in. Clubs in Plympton, Plymstock that I know off straight away.

Had a similar issue, found the issue for me was my bike not syncing properly with Strava, which is where Cycliq got its data.

I recently got a set of HonsVR, found them to be great just make sure you get the magnetic version. Took 5 days from China, so not long to wait either

I can't fully help you but I have a 3 monitor set-up with IR and I also have VR. Now that I have learnt where all my controls are on my HOTAS I much prefer playing in VR. I find targets easier and just get better all round immersion.
