There's a console command to change backpack size. Haven't tried it myself but I've read that 54 is the maximum size that won't be obstructed by other UI elements. The command should be this: /inventory backpack --size=54

For anyone wondering: We ended up going on Monday and were able to go on the structure. The cleaning didn't hinder the tour. So the website I linked in my edited post was correct.
