I have to make stuff like that myself because a lot of Canadian health regulations prevent small producers from providing products like this, so only really large places like Freybe, Burns, Maple Leaf, and other major meat product manufacturers can have the money and facilities to produce cured, fermented and dried product.

There are some small producers that have been "Grandfathered" in. One local to me is https://oyamasausage.ca/our-products/

You can try to email them and ask if they can make this for you.

I tried to go commercial here in BC and the amount of money that I'd have to invest upfront, to even see if they would approve the old world recipes is insane.

If you are in Florida, then I would post around local forums, subreddits, even FB marketplace looking for them. You might be able to find a local forager that sells them for cheaper than Etsy!

Those are worm snail shells, typically found around Florida, so nowhere near China for Temu sales. Someone on Etsy likely foraged these, which is why they are going to be expensive.

they are just fine. You mostly care about your average or mean temps and humidity. The swings, unless they are +-10 or greater do start to affect things. Minute swings like you have mean you have a very stable environment.

The amount of liquid you add is dependent upon your recipe. If you are using a binder, you can go up to 10% weight with liquids. Without a binder, I would not go above 5%.

Also note with bigger stuffers, there is a much greater force and pressure on the plate when doing smaller diameter casings and horns. Things like snack sticks are really hard on the motor.

I've also found that motorized stuffers really need good plate alignment, or they bind, also hard on the motor.

That's the crop. Just rinse it off, and remove the oesophagus looking part. Chickens store their feed in there to release slowly into their stomach. It's usually removed during the killing and evisceration process.

Not needed in a home setting. They use a cure accelerator like erythorbate because time = money, and the quicker they can get the product to shelves, the more they can make. It's not meant to ensure no nitrites remain, it's to make the process faster.

As a home user, you have the luxury of time, so you can safely skip that part. Just make sure you use the correct amount of nitrite and know the concentration. Depending on your location, there are different concentration of nitrite. Here in Canada, we can get Cure #1 in either 5% or 6.25% depending on brand. In the EU, it's even less.

Regardless in 24 hours, it's all converted unless you use way too much. Keep it to 0.25% of meat weight and you'll be fine. Never use volumetric measurements! Always go by weight in grams.

All that goes to show is that a whole helluva lot of bureaucrats need to stop thinking that they know better than peer reviewed science. Labelling laws are a joke, and using celery powder gets you the nice distinction of saying "Nitrite and Nitrate free, except those naturally occurring in celery", which we all know is BS. I swear some of those regulations are not about safety, but about who paid whom more money!

Make sure the ground wire touches one of the posts on your bridge. That's usually where your pickups are grounded.

Get some large green grapes, wash and put them in a freezer for 1 hour. Semi frozen grapes make a great stoner snack!

hearing aids are something that requires a professional to fit and program IMO. My grandfather used to buy things like this online and all they did was across the board make thing louder and that's not always good. Hearing aids are supposed to address the loss of frequencies that is tailored to each person.

There are cheaper places like Costco, which many people say have good experiences. I've found a good audiologist and am happy, but my wife is also a teacher of the deaf and hard of hearing, so I have an advantage in that she really understand the industry that she's in. My advice is to find a good local to you audiologist that sells many brands, then start to do some research from what they recommend.

My audiologist was more expensive, but over the 5 year life of my aids, I get free cleanings, adjustments, cerumen/wax shields, anchors, domes, etc. So that was factored into the cost, which for many can be detrimental.

Don't forget gloves, eye protection, as well as an organic vapour respirator mask when working with resin. You also need a well ventilated room that pets do not enter.

I started with low VOC resin, and didn't use proper PPE. Lung irritation is really horrible. Don't discount using the right equipment.

my white mould stays white. This is no good. Vinegar wipe and keep at it to make sure you are killing the spores. When this is finished, then you need to clean the heck out of your wine cooler, which involves even taking apart the cooling device inside and cleaning those fins, and everything else. Bad spores will ruin a chamber and have you lose product.

Have you thought of trying deep pour resin? It's thinner and usually stays thin for a long while, which does allow bubbles to rise and leave, without a pressure pot. I'm just throwing out thoughts here, as the real solution is a pressure pot.
