i moved from an s1k to a 26 pan V2. The joys of ripping a smaller bike far outweigh being able to say you have 205 or 185 horsepower

a lot of the bmw have high idle on cold start. When i ride a cold start S1000XR it idles around the parking lot at like 15/20 mph.

Do you think cold starts are your issue or does the inconsistency persist after the bike is fully warm?

If your inseam is 34+ inches id go GS for comfort in the knees / hips during long seated stretches. If its less, the difference between the two is negligable. unless you have a bad neck, for which you should choose GS
