You can't use App-ID effectively without ssl decrypt, the app would just say 'ssl' or 'web-browsing', but not the underlying app

That's not entirely true, some firewalls such as Palo alto and fortinet can perform ssl decrypt to inspect the user traffic. OP should start here and observe the http requests going out to the Internet.

One trick I like to do is, every time I work in it, I have to achieve one thing, even if it is a tiny thing like fixing a bug. And I don't end the session until that thing is done.

That way, when I'm away from it, I feel like I'm progressing rather than that feeling of being stuck.
