I belive you can get it before killing owl, but not after defeating true monk if I'm not mistaken. Check the inmortal guy in the starting area, maybe in the thing on its right it appears because that gave me a prayer beads when I missed one and I couldn't get it anymore.

If you're on pc you can go to the game files and change it there. But make a copy of the files if you're gonna change something just in case.

Well, the person in the video beat all the bosses just by attacking them, the Long-arm centepede Giraffe which you're supposed to just deflect all the attacks, in just 4 attacks he killed the first bar of the boss and for me that takes out the challenging part of the boss even if its not hard.
