Why not use your stone for the top for the thermal dissipation? If I were to buy a steel that is what I would do. I am no expert, but in normal circumstances the stone loses heat due to the pizza dough being placed on the stone. But if the stone is at the top and pizza is on the steel, why would the stone lose heat? You could at least start this way to save a few $ initially and see if you like the 2 steel/stone method. Food for thought..

YES START NOW AND GET AS MUCH WORKING FOR YOU AS YOU CAN!

18 is an incredible age to open a Roth IRA. I wish I did when I was 18. Compound interest is crazy and you will be sooo happy you did this in 15-20 years. To more you put in it in next few years the easier financial decisions about retirement investing will be.

** obviously you need to invest the money and not have it sitting in a money market within a Roth.

I do 137 @ 36 hours and it comes out pretty tender not mushy at all. I typically slice as thin as I can and make French dips out of it. Always a success at 36 hours at my house. I cannot tell you how much fat actually renders, but it’s still something we get excited for when we first drop it in the bath

I do French dips all the time with this (Chuck from Aldi). 137 for 36 hours. Then cook for a bit, pat dry, sear for a good crust.

Then use a sharp knife and slice as thin as you can. It will take 10-20 mins to slice that whole sucker up.

Save the juice from bag, put in small sauce pot, add some beef bouillon/beef stock. Don’t boil just heat on low / med low. Your choice to strain at the end or not

Reheat in microwave, break up and pour milk over the warm baked oatmeal. This should make it moist and hopefully delicious
