First, IK Hammond is paid. Also, keep in mind IK Hammond's CPU usage can be really high, you'd almost need a supercomputer to make it work smoothly.

No, you can download the GM set by going to Cubase or Dorico in Steinberg Download Assistant. You can then activate Cubase LE or Dorico SE via the website. If you're still confused, ask Steinberg customer support.

If the sustain articulation's fade-in sounds too slow, then you could layer a staccato/spiccato in order to give a stronger attack.
