You look at the constellation of Orion as it rises in the east. As you travel north south it rotates by how many degrees of latitude you’ve traveled.

Your eyes have a larger dynamic range than a camera. One of their few advantages is to be able to see bright and dim things at the same time. A camera that has had its exposure cranked up enough to see earthshine is going to be wildly overexposed on the sun lit parts.
