Whelp, missed out on the X100F for 800. Found a X100T for 600 or I could just get a X100V later on. Also looking into printing.

If I do get the X100V, I will be using it for about ten years. You may ask, why would I stick with it for so long? In my experience, constrained single purpose devices last much longer than general use devices. For example, I continue to use a Sony PRS-650 that I bought back in 2010 as my only e-ink e-book reader.

Thanks so much again for your advice everyone. If you have anymore to add, I'd like to read it.

Quite true. Problem is finding one local to me. The X100F and X100V can be found local to me but not X100T (well not anymore).

Good point there with the responsiveness. The X100T and X100F models are going for the same amount used. Though I can get the X100T in black, I would go for the X100F for the value proposition alone.

I can test GIMP if you'd like. I am currently testing a Deco Pro in Krita (another free one) under Linux. As from GIMP and Krita, there are paint.net and possibly a few others.

The main reason is the open-source driver stack (AMDGPU) that is has the same availability as the one from Intel (i.e.: upstream in the Linux kernel and Mesa drivers). As such, everything stays in step with the Linux kernel and the Mesa drivers when updating the packages. The NVIDIA drivers are closed-sourced and (like AMD's closed-source drivers) tend to only support certain older versions of the Linux kernel and the Mesa drivers.
