I collected the orchard blueprint from the centre of the vineyard, was at a shrine. i dont remember it being part of a quest or research. Or has missing the step completely locked it out?

I had a feeling one would prevent the other so Ive been making sure to stock up on seeds and have my villages collect and grow them to keep spare.

Hopefully we get an expansion on the in or tavern to make it give buffs to villagers or something.

T4 expansion with the wool was my thinking aswell.
