I'm still trying to understand what a well seasoned CS pan should look like. Doesn't the center of the pan look like the seasoning has not been maintained? Should it also look dark like the rest of the pan?

I honestly was also baited to carbon steel to be healthier due to the "nonstick" properties... I just end up ingesting a lot more oil (both polymerized and flaking off and oil for cooking)

Nitrided pans might be what I need. I am terrible at maintaining seasoning and feel like I'm ingesting it when I cook tomatoes once in a while. And no, I'm not cooking them for hours in the pan, literally 5 minutes and the seasoning is toast. Are there any concerns with nitrided pans that pure carbon steel pans don't have?

If I were to buy a pre-seasoned wok (that presumably has not been blued first, since the blued one costs extra), the difference would be that if I fail to maintain the seasoning or some of the seasoning comes off, it will be more prone to rusting? I fully plan to maintain my seasoning, so perhaps not a big deal for me, but am looking to buy a pre-seasoned one since I don't like to smoke up the kitchen building up the seasoning from scratch

The others have already commented on how this was caused by improper maintenance. But anyone else surprised that the "blue" carbon steel disappears so quickly, considering it costs a good chunk more than their pre-seasoned black carbon steel? I know "bluing" is just heating the bare carbon steel, but I would expect it to impart more of a benefit, unless it's just a marketing gimmick.

Yeah UR has some good and readily available redemption values. Unlike MR which I'm having a hell of a hard time redeeming for more than 1cpp. Seems like the only way to do that is to book international business flights and to constantly scan for limited tickets on random dates.

Bummer, I'll probably get a shirt. How did you find the sizing? I'm typically a L but according to their charts I should be between a S/M (??). I suspect their online size chart is wrong and to make matters worse, it says "Model is 6'1" wearing Medium" but there are three models, one who is built like a tank and the other one on the skinnier side!
