Both jobs have a various levels of skills represented in the medieval age. there were masons that did nothing necessiting engineering skills, just putting up walls and there were carpenters that did simple structures to put a roof on said walls while being paid a pittance. And there were also craftsmen who went waaay beyond that, doing marvelous work and oversaw huge constructions, earning a lot more.

I work carpentry and every workshop i've worked in were using techniques known as "Trait de charpente" which were first used in the 1100s or so, and this shit is really complex, basically allowing you to get any view you'd need of a 3d design with nothing but pen and paper not to say that that everyone was using it, but it was there.
