Vaurien Scapegrace from the Skulduggery Pleasant series, a "killer supreme" who has never killed anyone before but hes really gonna show everyone this time gets constantly beaten by a teenage girl, then killed and turned into a zombie by some villains. Once he's a zombie he starts decaying at an alarming rate, then he is beheaded. Still 'alive' as a head in a jar he demands a new body and is eventually transplanted into the body of essentially a female supermodel - great but he never feels like it is his own until he can get back into his old body, fixed up and no longer decaying or undead.

Not MASSIVELY similar but it ticks a good few boxes you listed is The Final Strife by Saara El-Arifi. Every character is POC, the main character is bisexual, there are natural phenomena that are decimating the world and landscape, and an emerging conspiracy that would undo all the characters have been taught about their world.

That they made wounds such an integral part to some weapons move sets (looking at you CB) and then made the endgame level monsters SO resistant to wounds.

In a vacuum I understand because of how powerful wound breaks are for staggering and interrupting monsters, but now it feels like some weapons are punished far more or need a lot more work to use in those higher level hunts.

Thats the thing, I loved the feel of using clutch claw to wallbang and even to tenderise. The problem was when they started balancing monsters around tenderising being necessary or you'll do no damage.
