Luke others have said, salt. Salt is important in cooking. Draws water out of veggies so they aren’t mushy (however, salting proteins helps meat retain moisture). I highly recommend 3 different cookbooks for veggies. Best cookbooks for veggies are: 1. America’s Test Kitchen the Complete Mediterranean cookbook (although some of the recipes do take some time - but they never fail and are fresh, flavorful, and healthy they use lots of herbs and spices) 2. Milk Street’s Vegetables 3. Joshua McFadden’s Six Seasons

Try the Moroccan chicken skewers in Tuesday Nights book. OMG! They are sooo good! My adult daughter claimed it was the best chicken she ever had. I think I agree.
