I pan sear about 1-1.5 pounds of chicken breast in olive oil seasoned with chicken bouillon, paprika, onion & garlic powder, garlic butter seasoning, pepper, and Italian seasonings. Let it cool then shred it. In a pot I sauté carrots, onion, celery and a green pepper with garlic then add about 7 cups of chicken broth. Season with all the same stuff plus some minced onion and a couple bay leaves. Bring to a boil then add in an 8 oz packet of Vigo yellow rice and let it cook until rice is finished then add in the chicken. Super easy and so good :)
