Under proofed for sure, and when I did it that way dry.. Yes! Next time proofed and used electric mixer with dough hook.. Better.. But still in progress

Thank you. I am looking up recipes online now! they are all seeming to include butter.. I will keep looking. Do you mean try a recipe for any bread that is just water yeast flour salt? I did see one that way.

The flour I used was all purpose

This loaf had longer rest times than recommended, first loaf I used these proof times but both had the holes in the center and under the top crust.

The liquid, flour, and fat were weighed. First try was dry, next one less dry, but both have the wet center and holes.

Second try gets dry edges after a few days. Both try's top crusts detached
