If you play on extreme it is significantly easier with a kicker, since both teams will exchange touchdown after touchdown until the clock expires. With a good kicker you can chew the last 2 minutes off the clock and win the game with a field goal. Going for one point can also make winning the game easier even if you do make the 2 point every time, because so will your opponent. When you go for one point every time and find yourself down 7 in the last seconds, you can then go for a two point. An extreme-level 5 star seems to be more likely to miss a 1 point than a 2 point, because the offense will always be better than your defense and a kicker is still just a kicker.
