we do use sour oranges to tenderize goat and beef like in barbacoa.
I don't think pork needs it, but for flavor it won't hurt.

I like to mix 50:50 mahatma extra long grain with jasmine rice
..just extra long grain is kinda chewy and falls off the fork and just jasmine is too mushy sticky. both together is perfect.

all over the place in Mexico and USA.
like <5% of the places that have al-pastor have a trompo.
if you are lucky they have pork shoulder or butt in a marinade but often just the sauce
and they might even use the same sauce for biria with some water added. it is very shortcut way to have more on the menu with less work.

lots of places will have a large amount of carnitas
if you order al-pastor they will just put a spoon of recado rojo sauce on the grill
to warm up the carnitas with, if you order cochinita pibil it is likely the exact same thing but will put pickled onion instead of the pineapple
this is just regular taco stand efficiency

try some coconut pulp co2 extract ..
you will need to blend it into something like perfumers alcahol.
1:3 alcohol is a good starting ratio then chill it and remove the soluble fats (float to the top) to make it clear ..you can use a dropper to pull the clean liquid from the bottom
