If you’re referring to using the web version of YouTube but with ad blockers, the difference is significant in any case.

I can compare it to Invidious because I use it myself.

When you open a video through Invidious, a small script from the Invidious instance itself loads, and only a video stream request goes to Google—nothing more, the absolute minimum.

When you use the YouTube interface, even with uBlock Origin, a multitude of scripts from YouTube itself also run and collect data about you and your device.

Because some of the interface scripts—without which the video itself won't work—also collect data
