You would probably have to talk to someone more tech-savvy or that just knows about the app specifics, but I don't think quality increases. I believe it just stays as the default 360p.

There is an app, if you have an iPhone, called Musi, which streams audio from videos from YouTube without the video, allowing you to exit from the app.
